FAQs
-
A proper New York style pie has a thin, crispy, and well browned crust that is slightly chewy. A slice should be foldable and is sturdy enough to hold its tip without much support. The sauce should be slightly sweet, acidic and lightly seasoned with herbs and alliums. Whole-milk low-moisture cheese adorns the top lightly mottled and blending with the sauce beneath.

Absolutely. We also take orders about an hour before we open. Bigger orders may require a deposit or payment before pickup.

Because we make food, not inventory.
We prepare our dough at least a day ahead. Sauce, and ingredients are prepped every day based on what we expect to sell. Once it's gone, it's gone. We'd rather sell out than serve mass produced junk. We constantly adjust production, but on busy days the island simply eats faster than we can make it.

Check out our menu for a breakdown of “half toppings”.

We can split any toppings on a pie. We do not, however, split sauces. Have a family at war with what they want on the pie? Split the toppings. Lightwork.
-
Dine-in is on a first-come first-serve basis. We do not take reservations for tables.

Are they really? One 18 inch pie can feed up to four adult humans. If you bought a cheese pizza for 25/4 humanbeans that would be just $6.25 dollars per human. We also have 14 inch pies available. AND Slices. Not to mention that we make our dough, sauces, and toppings in-house. We'd say were actually some of the most inexpensive fare on the Island.
